- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup milk
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
- Butter or cooking spray (for greasing muffin tin)
Instructions
- Preheat your oven to 400°F (200°C). Grease a muffin tin with butter or cooking spray.
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and green onions (if using). Season with salt and pepper to taste.
- Mix well until everything is fully incorporated.
- Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
- Bake for 20–25 minutes, or until the tops are golden brown and slightly crispy.
- Cool for a few minutes before gently removing from the tin. Serve warm and enjoy!
