  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste
  • Butter or cooking spray (for greasing muffin tin)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin with butter or cooking spray.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and green onions (if using). Season with salt and pepper to taste.
  3. Mix well until everything is fully incorporated.
