Cheesy Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • ¼ cup milk
  • Salt and pepper, to taste
  • Cooking spray or butter, for greasing muffin tin

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with cooking spray or butter.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan, eggs, chives, and milk. Season with salt and pepper.
  3. Stir until everything is well mixed and smooth.
  4. Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
  5. Bake for 20–25 minutes or until the tops are golden brown and the puffs are set.
  6. Let them cool for a few minutes, then carefully remove from the tin.
  7. Serve warm, garnished with extra chives if desired.
