Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 2 eggs
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onions
- ¼ cup milk
- Salt and pepper, to taste
- Cooking spray or butter, for greasing muffin tin
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with cooking spray or butter.
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan, eggs, chives, and milk. Season with salt and pepper.
- Stir until everything is well mixed and smooth.
- Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
- Bake for 20–25 minutes or until the tops are golden brown and the puffs are set.
- Let them cool for a few minutes, then carefully remove from the tin.
- Serve warm, garnished with extra chives if desired.
