INGREDIENTS
- 2 cups mashed potatoes (leftover or freshly made, cooled)
- 1 cup shredded cheddar cheese (or mozzarella)
- 1/4 cup grated Parmesan cheese (optional for extra flavor)
- 1/4 cup chopped green onions or parsley
- 1 egg
- 1/4 cup all-purpose flour (plus extra for coating)
- Salt and pepper to taste
- 2–3 tbsp cooking oil (for frying)
INSTRUCTIONS
- Prepare the Mixture:
In a large bowl, combine the mashed potatoes, shredded cheddar cheese, Parmesan (if using), green onions, egg, flour, salt, and pepper. Mix until everything is well combined. - Form the Patties:
Scoop out a portion of the mixture and shape it into a small patty (about 2-3 inches wide). Lightly dust each patty with flour to help them hold their shape. - Heat the Oil:
In a non-stick skillet or frying pan, heat oil over medium heat. - Cook the Patties:
Place the patties in the hot oil and cook for 3–4 minutes on each side or until golden brown and crispy. Don’t overcrowd the pan; cook in batches if necessary. - Drain and Serve:
Remove the patties and place them on a paper towel-lined plate to drain excess oil. Serve warm with sour cream, ketchup, or your favorite dipping sauce.
