Cheesy Ground Meat Tortilla Rolls Recipe

These savory tortilla rolls are filled with a flavorful ground meat mixture and plenty of melted cheese, then baked until golden brown. They’re a fun and easy appetizer or main course that’s perfect for sharing.

Ingredients:

  • 8 large flour tortillas (about 10-inch diameter)
  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (4 ounce) can diced green chilies (optional)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1/4 cup chopped fresh cilantro (or parsley)
  • Olive oil (for brushing)  

Instructions:

  1. Prepare the Filling:
    • Preheat oven to 375°F (190°C).
    • In a large skillet over medium heat, cook the ground beef (or ground turkey), breaking it up with a spoon, until browned. Drain off any excess grease.
    • Add the chopped onion and cook for 5-7 minutes until softened.
    • Add the minced garlic and cook for another minute until fragrant.  
    • Stir in the diced tomatoes, green chilies (if using), chili powder, cumin, oregano, salt, and pepper.
    • Simmer for 5-10 minutes, stirring occasionally, until the sauce has thickened slightly.
    • Remove from heat and stir in the shredded cheese and chopped cilantro (or parsley).
  2. Assemble the Tortilla Rolls:
    • Lay a tortilla flat on a clean surface.
    • Spread about 1/2 cup of the meat filling evenly over the tortilla, leaving a small border around the edges.
    • Roll the tortilla up tightly, starting from one edge.
    • Repeat with the remaining tortillas and filling.
  3. Bake the Tortilla Rolls:
    • Brush a baking dish (9×13 inch) with olive oil.
    • Place the tortilla rolls seam-down in the baking dish.
    • Brush the tops of the rolls with olive oil.
    • Bake for 20-25 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
  4. Garnish and Serve:
    • Let the rolls cool slightly before slicing and serving.
    • Garnish with extra chopped cilantro (or parsley), if desired.
