Cheesy Garlic Chicken Pasta

Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups uncooked pasta (penne or fettuccine works well)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream. Bring to a gentle simmer.
