Ingredients
- 2 large chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups uncooked pasta (penne or fettuccine works well)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream. Bring to a gentle simmer.
- Stir in the mozzarella and Parmesan cheeses until melted and smooth.
- Add the cooked pasta and chicken back into the skillet. Toss to coat everything in the cheesy garlic sauce.
- Cook for another 2-3 minutes, stirring, until heated through and well combined.
- Garnish with chopped parsley and extra Parmesan if desired. Serve warm!
