Cheesy Garlic Chicken Pasta

Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups uncooked pasta (penne, fettuccine, or your choice)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Make the Garlic Sauce: In the same skillet, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant (don’t burn it!).
  4. Add Liquids & Cheese: Pour in the chicken broth and heavy cream. Stir and bring to a simmer. Reduce heat to low and add mozzarella and Parmesan cheese. Stir until the cheese melts and the sauce thickens.
  5. Combine: Return the cooked chicken and pasta to the skillet. Toss everything together until well coated in the cheesy garlic sauce.
  6. Serve: Garnish with chopped parsley and extra Parmesan if desired. Serve warm and enjoy!
