- 2 large chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups uncooked pasta (penne, fettuccine, or your choice)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tablespoon butter
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Make the Garlic Sauce: In the same skillet, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant (don’t burn it!).
- Add Liquids & Cheese: Pour in the chicken broth and heavy cream. Stir and bring to a simmer. Reduce heat to low and add mozzarella and Parmesan cheese. Stir until the cheese melts and the sauce thickens.
- Combine: Return the cooked chicken and pasta to the skillet. Toss everything together until well coated in the cheesy garlic sauce.
- Serve: Garnish with chopped parsley and extra Parmesan if desired. Serve warm and enjoy!
