Ingredients

  • 2 large chicken breasts, diced
  • 8 oz (225 g) pasta (penne, fettuccine, or your choice)
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain and set aside.
  2. Cook the chicken: In a large skillet over medium-high heat, heat olive oil or butter. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook for 5–7 minutes until golden and cooked through. Remove chicken and set aside.
