Cheesy Garlic Bread Shrimp Grilled Cheese

INGREDENT

  • 8 slices of bread (Italian or sourdough works great)
  • 2 cups cooked shrimp (peeled, deveined, roughly chopped)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional for heat)
  • Salt & pepper to taste

Instructions

  1. Make Garlic Butter: In a small bowl, mix softened butter, minced garlic, parsley, Italian seasoning, and a pinch of salt and pepper.
  2. Prepare Bread: Spread the garlic butter evenly over one side of each bread slice.
  3. Assemble Sandwich: On the unbuttered side of 4 slices, add a layer of mozzarella, shrimp, cheddar, and a sprinkle of red pepper flakes (if using). Top with another slice of bread, buttered side facing out.
  4. Grill the Sandwiches: Heat a skillet or griddle over medium heat. Cook each sandwich 3–4 minutes per side until the bread is golden brown and the cheese is melted.
  5. Serve Hot: Slice in half and enjoy the cheesy, garlicky, shrimp-filled goodness!

If you like, I can also give you a version with a gooey garlic cheese dip on the side for extra flavor.
