- 8 slices of bread (Italian or sourdough works great)
- 2 cups cooked shrimp (peeled, deveined, roughly chopped)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 tbsp unsalted butter (softened)
- 3 cloves garlic (minced)
- 1 tbsp fresh parsley (chopped)
- 2 tbsp mayonnaise
- Salt & pepper to taste
- Optional: chili flakes for a little heat
Instructions
- Prepare Garlic Butter – In a small bowl, mix softened butter, minced garlic, and chopped parsley.
- Butter the Bread – Spread the garlic butter evenly over one side of each slice of bread.
- Make the Filling – In another bowl, combine shrimp, mozzarella, cheddar, mayonnaise, salt, pepper, and chili flakes (if using).
- Assemble Sandwiches – Place half the bread slices, buttered side down, on a skillet or griddle over medium heat. Top each with shrimp-cheese mixture, then cover with another bread slice, buttered side up.
- Grill – Cook for 3–4 minutes on each side until the bread is golden and crispy, and the cheese is melted.
- Serve Hot – Slice and enjoy your cheesy, garlicky shrimp melt!
