INGREDIENTS
- 8 slices of bread (Italian or sourdough works great)
- 1/2 cup unsalted butter, softened
- 2–3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp Old Bay or Cajun seasoning
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup Parmesan cheese
Instructions
- Make the Garlic Butter:
In a bowl, mix softened butter with minced garlic, parsley, salt, pepper, and red pepper flakes. Set aside. - Cook the Shrimp:
In a skillet over medium heat, add olive oil. Season the shrimp with Old Bay or Cajun seasoning. Sauté for 3–4 minutes or until fully cooked. Remove and set aside. - Prepare the Bread:
Spread the garlic butter mixture generously on one side of each bread slice. - Assemble the Sandwich:
Heat a large skillet or griddle over medium-low heat. Place 4 slices of bread, butter side down. Top with a mix of mozzarella, cheddar, cooked shrimp, more cheese, then the second bread slice, butter side up. - Grill:
Cook each sandwich for about 3–4 minutes per side, pressing slightly, until the bread is golden and crispy and the cheese is melted. - Serve:
Slice in half, sprinkle with extra parsley or parmesan if desired, and enjoy hot!
