Cheesy Garlic Bread Shrimp Grilled Cheese

INGREDIENTS

  • 8 slices of bread (Italian or sourdough works great)
  • 1/2 cup unsalted butter, softened
  • 2–3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp Old Bay or Cajun seasoning
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup Parmesan cheese

Instructions

  1. Make the Garlic Butter:
    In a bowl, mix softened butter with minced garlic, parsley, salt, pepper, and red pepper flakes. Set aside.
  2. Cook the Shrimp:
    In a skillet over medium heat, add olive oil. Season the shrimp with Old Bay or Cajun seasoning. Sauté for 3–4 minutes or until fully cooked. Remove and set aside.
  3. Prepare the Bread:
    Spread the garlic butter mixture generously on one side of each bread slice.
  4. Assemble the Sandwich:
    Heat a large skillet or griddle over medium-low heat. Place 4 slices of bread, butter side down. Top with a mix of mozzarella, cheddar, cooked shrimp, more cheese, then the second bread slice, butter side up.
  5. Grill:
    Cook each sandwich for about 3–4 minutes per side, pressing slightly, until the bread is golden and crispy and the cheese is melted.
  6. Serve:
    Slice in half, sprinkle with extra parsley or parmesan if desired, and enjoy hot!
