Ingredients
- 4 slices of thick-cut bread (sourdough or Italian bread works great)
- 2 tbsp butter, softened
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- 1 cup cooked shrimp, chopped
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 1 tbsp mayonnaise (optional, for extra crispiness)
- 1 tsp olive oil
- Salt & pepper to taste
Instructions
- Prepare the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, parsley, garlic powder, and Italian seasoning. Spread this mixture evenly on one side of each bread slice.
- Cook the Shrimp: Heat olive oil in a pan over medium heat. Add chopped shrimp, season with salt and pepper, and cook for 2-3 minutes until heated through. Remove from heat.
- Assemble the Sandwich: Spread a thin layer of mayonnaise (if using) on the unbuttered side of each bread slice. On two slices, layer shredded mozzarella, cooked shrimp, cheddar cheese, and Parmesan. Top with the remaining slices of bread (butter side facing out).
- Grill the Sandwich: Heat a skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
