Ingredients
- 8 slices of thick bread (Italian or sourdough works great)
- 2 cups cooked shrimp (peeled & deveined, tails removed)
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil (for cooking shrimp if needed)
- Salt & pepper, to taste
Instructions
- Prepare the Garlic Butter:
In a small bowl, mix softened butter, minced garlic, and chopped parsley. - Cook the Shrimp (if needed):
If using raw shrimp, heat olive oil in a skillet over medium heat. Add shrimp, season with salt & pepper, and cook for 2–3 minutes per side until pink and cooked through. Remove and chop into bite-sized pieces. - Assemble the Sandwiches:
Spread garlic butter on one side of each bread slice. Place half of the slices butter-side down. - Layer the Filling:
On each bottom slice, add a layer of mozzarella and cheddar cheese, top with cooked shrimp, then another sprinkle of cheese. Place another bread slice on top, butter-side up. - Grill the Sandwiches:
Heat a large skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for about 3–4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted. - Serve:
Remove from heat, slice in half if desired, and enjoy your cheesy, garlicky shrimp grilled cheese!
