- 2 large eggs
- 2 slices of bread (your choice: white, whole wheat, or sourdough)

- 1 tablespoon butter
- Salt and pepper, to taste

Instructions
- Cook the Eggs: Heat a non-stick skillet over medium heat and add a little butter. Crack the eggs into the pan, season with salt and pepper, and cook to your desired doneness (fried, scrambled, or over-easy). Add a slice of cheese on top of each egg and cover the pan for a minute to melt the cheese.
- Toast the Bread: While the eggs cook, toast the slices of bread in a toaster or on a separate skillet with a little butter until golden brown.
- Assemble the Sandwich: Spread mayonnaise or mustard on one side of each toasted bread slice if desired. Place one cheesy egg on each slice of bread, then sandwich them together.
