- 1 lb (450 g) chicken breast, finely chopped
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 3 tbsp mayonnaise
- 1/4 cup all-purpose flour (or almond flour for low-carb)
- 2 tbsp fresh parsley, chopped
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
- Oil for frying
Instructions
- In a large mixing bowl, combine chopped chicken, cheese, eggs, mayonnaise, flour, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a thin layer of oil.
- Scoop about 2 tablespoons of the mixture per fritter into the pan, flatten slightly with a spatula.
- Fry for 3–4 minutes on each side, or until golden brown and cooked through.
- Transfer to a plate lined with paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce (garlic mayo, ranch, or spicy ketchup).
