- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese (or cheese of choice)
- 1/2 cup breadcrumbs

- 1/4 cup chopped green onions
- 1/4 cup mayonnaise
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine the shredded chicken, cheddar cheese, breadcrumbs, Parmesan, green onions, and mayonnaise.
- Crack the egg into the bowl and add the garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.
- Using your hands, form the mixture into small patties, about 1-2 inches in diameter.
- Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the fritters to the pan, cooking in batches if necessary.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
- Remove from the skillet and drain on paper towels to remove excess oil.
