INGREDENT

  • 1 lb (450 g) chicken breast, finely chopped
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 3 tbsp mayonnaise
  • 1/4 cup all-purpose flour (or almond flour for low-carb)
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine chopped chicken, cheese, eggs, mayonnaise, flour, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.
  2. Heat a non-stick skillet over medium heat and add a thin layer of oil.
  3. Scoop about 2 tablespoons of the mixture per fritter into the pan, flatten slightly with a spatula.
  4. Fry for 3–4 minutes on each side, or until golden brown and cooked through.
  5. Transfer to a plate lined with paper towels to drain excess oil.
  6. Serve warm with your favorite dipping sauce (garlic mayo, ranch, or spicy ketchup).
