Cheesy Biscuit Bake with Pepper Topping

Ingredients

For the Biscuit Base:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk
  • 1 cup shredded cheddar cheese

For the Topping:

  • 1 cup mixed bell peppers (red, green, yellow), thinly sliced
  • 1/2 cup onion, thinly sliced
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning (optional)
  • 1 tbsp olive oil
  • Extra 1/2 cup shredded mozzarella or cheddar cheese (for topping)

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and grease a baking dish.
  2. Make Biscuit Dough:
In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter using a pastry cutter or fingers until crumbly. Add milk and shredded cheddar cheese; mix just until combined. Do not overwork.
  3. Press into Dish:
Spread the biscuit dough evenly into the greased baking dish.
  4. Prepare the Pepper Topping:
In a skillet over medium heat, add olive oil and sauté sliced bell peppers and onions until slightly soft (about 4–5 minutes). Season with black pepper, garlic powder, and Italian seasoning.
  5. Assemble the Bake:
Spread the sautéed pepper mixture evenly over the biscuit dough. Sprinkle extra cheese on top.
  6. Bake:
Place in the oven and bake for 20–25 minutes or until the biscuit base is cooked through and the cheese is golden and bubbly.
  7. Cool & Serve:
Let it cool slightly before cutting into squares. Serve warm for best flavor.
