Cheesy Beef & Vegetable Casserole Recipe

This hearty and comforting casserole is packed with flavor and perfect for a family meal or a potluck. Ground beef is cooked with onions and garlic, then combined with a medley of vegetables and smothered in a creamy cheese sauce.  

Ingredients:

  • 1 pound ground beef  
  • 1 onion, chopped  
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup  
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 cup shredded cheddar cheese  
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Brown the beef: In a large skillet over medium heat, brown the ground beef. Drain off any excess grease.
  2. Sauté vegetables: Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  3. Combine ingredients: In a large bowl, combine the browned beef, onion, garlic, cream of mushroom soup, frozen mixed vegetables, shredded cheddar cheese, sour cream, and chopped parsley. Season with salt and pepper to taste.
  4. Bake: Pour the mixture into a greased 9×13 inch baking dish. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until bubbly and heated through.
  5. Serve: Let the casserole stand for a few minutes before serving. Enjoy!
