These cheesy baked potato meatballs are a delicious and easy weeknight meal. They’re packed with flavor and perfect for a crowd.
Ingredients:
- 2 large russet potatoes, peeled and cubed
- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded cheddar cheese
Instructions:
- Boil the potatoes: Place the cubed potatoes in a pot of boiling salted water. Cook until tender, about 15-20 minutes. Drain and mash well.
- Combine ingredients: In a large bowl, combine the mashed potatoes, ground beef, bread crumbs, onion, garlic, parsley, salt, and pepper. Mix well.
