Ingredients
- 1 box lemon cake mix
- 1 can (21 oz) lemon pie filling or lemon curd
- 1 package (8 oz) cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Optional: zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Spread the lemon pie filling evenly in the bottom of the dish.
- In a medium bowl, beat the cream cheese, sugar, and vanilla until smooth and creamy. Drop spoonfuls of the cream cheese mixture over the lemon filling.
- Sprinkle the dry lemon cake mix evenly over the top.
- Drizzle the melted butter evenly over the cake mix. Try to cover as much of the dry mix as possible.
- If desired, sprinkle lemon zest over the top for extra zing.
- Bake for 35–40 minutes, or until the top is golden and the edges are bubbling.
- Let cool slightly, then serve warm. Enjoy on its own or with a scoop of vanilla ice cream!
