Cheesecake Dump Cake with Lemon

Ingredients

  • 1 box lemon cake mix
  • 1 can (21 oz) lemon pie filling or lemon curd
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Optional: zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Spread the lemon pie filling evenly in the bottom of the dish.
  3. In a medium bowl, beat the cream cheese, sugar, and vanilla until smooth and creamy. Drop spoonfuls of the cream cheese mixture over the lemon filling.
  4. Sprinkle the dry lemon cake mix evenly over the top.
  5. Drizzle the melted butter evenly over the cake mix. Try to cover as much of the dry mix as possible.
  6. If desired, sprinkle lemon zest over the top for extra zing.
  7. Bake for 35–40 minutes, or until the top is golden and the edges are bubbling.
  8. Let cool slightly, then serve warm. Enjoy on its own or with a scoop of vanilla ice cream!
