- 1 lb (about 20-24) fresh large strawberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar (more to taste)
- 1/2 tsp vanilla extract
- 2-3 tbsp graham cracker crumbs (optional, for garnish)
Instructions
- Prep the strawberries:
Wash the strawberries and pat dry. Cut off the green tops so they sit flat. Using a small knife or melon baller, carefully hollow out the center of each strawberry. - Make the cheesecake filling:
In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. - Fill the strawberries:
Transfer the cheesecake mixture into a piping bag or a resealable plastic bag with the corner snipped off. Pipe the filling into each hollowed strawberry. - Garnish:
Sprinkle with graham cracker crumbs for that classic cheesecake touch, if desired. - Serve & enjoy:
Arrange on a plate and refrigerate for about 15 minutes to firm up, or serve immediately!
