Cheeseburger Egg Rolls

Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 1/4 cup pickles, chopped (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 10-12 egg roll wrappers
  • Vegetable oil for frying

Instructions

  1. In a large skillet, cook the ground beef over medium heat, breaking it apart with a spoon until browned and cooked through.
  2. Add the diced onion and cook for 2-3 minutes, until softened.
  3. Stir in the ketchup, mustard, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes until combined.
  4. Remove the skillet from heat, then mix in the shredded cheddar cheese and chopped pickles (if using). Let the mixture cool for a few minutes.
  5. Place an egg roll wrapper on a clean surface with one corner pointing towards you. Add about 2 tablespoons of the beef mixture in the center.
  6. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to form an egg roll.
  7. Seal the edge of the wrapper with a little water.
  8. Heat the vegetable oil in a large pan over medium-high heat for frying. Once the oil is hot, fry the egg rolls in batches for 3-4 minutes, turning occasionally until golden brown and crispy.
  9. Remove from oil and place on a paper towel-lined plate to drain excess oil.
  10. Serve hot with extra ketchup and mustard for dipping.
