Cheese and Herb Savoury Custard Recipe

This creamy and comforting savoury custard is a delightful appetizer, side dish, or light meal. It’s packed with the flavors of cheese, herbs, and a hint of spice.

Ingredients:

  • 1 cup milk (whole or 2%)
  • 1 cup heavy cream
  • 4 large eggs
  • 1/2 cup grated Gruyère or sharp cheddar cheese (or a combination)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh herbs (thyme, parsley, chives, or a mix)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • Paprika, for dusting (optional, for garnish)

Instructions:

  1. Preheat Oven and Prepare Baking Dish: Preheat oven to 325°F (160°C). Lightly grease a 4-cup baking dish or individual ramekins.
  2. Combine Milk, Cream, and Eggs: In a medium bowl, whisk together the milk, heavy cream, and eggs until well combined.
  3. Add Cheese and Herbs: Stir in the Gruyère or cheddar cheese, Parmesan cheese, chopped herbs, Dijon mustard, salt, pepper, and cayenne pepper (if using).
  4. Pour into Baking Dish: Pour the custard mixture into the prepared baking dish or ramekins.
  5. Bake: Place the baking dish or ramekins in a larger baking pan. Fill the larger pan with hot water halfway up the sides of the baking dish (this creates a water bath). Bake for 35-40 minutes, or until the custard is set and a knife inserted into the center comes out clean.  
  6. Cool Slightly: Remove the baking dish or ramekins from the water bath and let them cool slightly before serving.
  7. Garnish and Serve: Dust with paprika (if using) and serve warm.
