2 tablespoons fresh herbs (e.g., rosemary, thyme, or oregano), chopped
Optional: additional olive oil for brushing, and a pinch of garlic powder or red pepper flakes for extra flavor
Instructions:
In a mixing bowl, combine the flour, salt, and baking powder. Whisk the dry ingredients together until well mixed.
Create a well in the center of the flour mixture and add the olive oil. Gradually pour in the warm water while stirring with a fork or your hands, until a dough begins to form.
Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
Once kneaded, cover the dough with a clean kitchen towel or plastic wrap and let it rest for about 30 minutes.
Preheat your oven to 475°F (245°C) and place a baking sheet or pizza stone inside to heat up.
After resting, divide the dough into two equal portions. Roll out each portion on a floured surface to your desired thickness, typically about ¼ inch.
Transfer the rolled-out dough to a piece of parchment paper or a lightly floured surface. Sprinkle the shredded cheese and chopped herbs evenly over the surface of the dough. If desired, add a pinch of garlic powder or red pepper flakes for additional flavor.
Fold the edges of the flatbread over the filling to create a crust, or leave it open-faced for a cheesier result.
Carefully transfer the flatbread (on the parchment paper) to the preheated baking sheet or pizza stone. Bake for 10-15 minutes or until the flatbread is golden brown and the cheese is bubbly.
Once baked, remove from the oven and let it cool for a few minutes. Brush with a little olive oil if desired, and slice into pieces.
