Ingredients
- 1 lb (450g) ground beef
- 1 cup sharp cheddar cheese, cut into small cubes
- 8-10 slices of bacon
- 1/2 cup BBQ sauce (your favorite kind)
- 1/2 cup breadcrumbs (optional, for binding)
- 1 egg (optional, for binding)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- Toothpicks
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
- Prepare the beef mixture: In a large bowl, combine ground beef, garlic powder, onion powder, salt, pepper, breadcrumbs, and egg (if using). Mix until just combined — don’t overmix.
- Stuff the cheese: Take a small handful of the beef mixture, flatten it in your palm, and place a cube of cheddar in the center. Wrap the beef around the cheese and roll into a ball. Repeat with the remaining beef and cheese.
- Wrap with bacon: Take a slice of bacon and wrap it around the beef ball. Secure with a toothpick if needed.
- Add BBQ sauce: Brush each bacon-wrapped ball generously with BBQ sauce.
- Bake: Arrange the bombs on the prepared baking sheet. Bake for 20–25 minutes, or until the bacon is crispy and the beef is cooked through.
- Optional finish: For extra caramelization, broil for an additional 2–3 minutes at the end, watching carefully.
- Serve: Let cool slightly, remove toothpicks, brush with extra BBQ sauce if desired, and enjoy!
