Cheddar, Chive, and Zucchini Quick Bread


This savory quick bread is a perfect combination of rich cheddar cheese, fresh chives, and grated zucchini, offering a delicious and moist texture. Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 ½ cups shredded cheddar cheese
  • ¼ cup chopped fresh chives
  • 1 small zucchini, grated (about 1 cup)
  • 2 large eggs
  • ½ cup milk
  • ¼ cup olive oil or melted butter
  • 1 teaspoon dried oregano (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and oregano (if using).
  3. Add the shredded cheddar cheese, chopped chives, and grated zucchini to the dry ingredients. Stir until well combined.
  4. In a separate bowl, whisk together the eggs, milk, and olive oil (or melted butter).
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
