Ingredients
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk
- ¼ cup vegetable oil (or melted butter)
- 1 large egg
- 1 cup fresh or frozen blueberries (no need to thaw if frozen)
- ½ teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined — don’t overmix!
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack.
