Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ¼ cup vegetable oil (or melted butter)
  • 1 large egg
  • 1 cup fresh or frozen blueberries (no need to thaw if frozen)
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined — don’t overmix!
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 5 minutes, then transfer to a wire rack.
