Ingredients
For the Chapati:
- 2 cups whole wheat flour
- 1/2 tsp salt
- 1 tbsp vegetable oil
- 3/4 cup warm water (adjust as needed)
For the Beef Stew:
- 1 lb beef stew meat (cubed)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 tbsp ginger (grated)
- 2 tomatoes (chopped)
- 2 carrots (sliced)
- 2 potatoes (cubed)
- 2 cups beef broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp turmeric
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish (optional)
Instructions
Chapati:
- In a large bowl, combine the whole wheat flour and salt. Add the oil and gradually add warm water, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Divide the dough into equal balls and roll each ball into thin circles (about 6-8 inches in diameter).
- Heat a dry skillet or griddle over medium-high heat. Cook each chapati for about 1-2 minutes per side, until brown spots appear. Set aside.
Beef Stew:
- Heat 2 tbsp of oil in a large pot over medium heat. Add the beef cubes and brown on all sides, then remove and set aside.
- In the same pot, add onions, garlic, and ginger. Cook for 3-4 minutes until soft and fragrant.
- Stir in the tomatoes and cook until they soften and release their juices.
- Add cumin, coriander, paprika, turmeric, and bay leaf. Stir for about 1 minute to toast the spices.
- Return the beef to the pot, add the beef broth, carrots, and potatoes. Season with salt and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1-1.5 hours until the beef is tender and the stew thickens.
