Cauliflower Fritters

Ingredients

  • 1 medium head of cauliflower (about 4 cups, finely chopped or grated)
  • 2 large eggs
  • 1/3 cup all-purpose flour (or chickpea flour for gluten-free)
  • 1/4 cup grated Parmesan cheese (optional but recommended)
  • 2–3 green onions, finely sliced
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1/4 tsp paprika or cumin (optional for extra flavor)
  • Oil for frying (olive oil or vegetable oil)

Instructions

  1. Prep the Cauliflower:
    • Steam or boil the cauliflower until tender, about 5–7 minutes. Drain and let cool slightly.
    • Finely chop or mash it (you want small pieces, not purée).
  2. Make the Batter:
    • In a large bowl, combine the cauliflower, eggs, flour, Parmesan, green onions, garlic, and seasonings.
    • Mix until everything is well incorporated and holds together. If too wet, add a little more flour.
  3. Fry the Fritters:
    • Heat oil in a non-stick skillet over medium heat.
    • Scoop about 2 tablespoons of the mixture for each fritter, flatten slightly with the back of a spoon.
    • Cook 3–4 minutes on each side or until golden brown and crisp.
  4. Drain & Serve:
    • Remove from pan and drain on paper towels.
    • Serve hot with sour cream, yogurt dip, or your favorite sauce.
