Ingredients
- 1 medium head of cauliflower (about 4 cups, finely chopped or grated)
- 2 large eggs
- 1/3 cup all-purpose flour (or chickpea flour for gluten-free)
- 1/4 cup grated Parmesan cheese (optional but recommended)
- 2–3 green onions, finely sliced
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1/4 tsp paprika or cumin (optional for extra flavor)
- Oil for frying (olive oil or vegetable oil)
Instructions
- Prep the Cauliflower:
- Steam or boil the cauliflower until tender, about 5–7 minutes. Drain and let cool slightly.
- Finely chop or mash it (you want small pieces, not purée).
- Make the Batter:
- In a large bowl, combine the cauliflower, eggs, flour, Parmesan, green onions, garlic, and seasonings.
- Mix until everything is well incorporated and holds together. If too wet, add a little more flour.
- Fry the Fritters:
- Heat oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture for each fritter, flatten slightly with the back of a spoon.
- Cook 3–4 minutes on each side or until golden brown and crisp.
- Drain & Serve:
- Remove from pan and drain on paper towels.
- Serve hot with sour cream, yogurt dip, or your favorite sauce.
