Ingredients
- 2 cups grated carrots
- 1 cup chopped walnuts
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp nutmeg (optional)
- 2 eggs
- ¾ cup vegetable oil
- 1 cup granulated sugar (or ½ cup brown + ½ cup white for extra flavor)
- 1 tsp vanilla extract
Optional Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- ½ cup butter (softened)
- 1 tsp vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch pan or line with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another large bowl, beat the eggs, then add sugar, oil, and vanilla. Mix until well combined.
- Fold in the dry ingredients into the wet mixture until just combined. Then stir in the grated carrots and chopped walnuts.
- Pour the batter into your prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting, if using.
- To make the frosting, beat cream cheese and butter until smooth. Add vanilla and powdered sugar, and beat until fluffy. Spread over cooled cake.
