Carrot Walnut Cake! You will make this cake every day. Quick and easy.

Ingredients

  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg (optional)
  • 2 eggs
  • ¾ cup vegetable oil
  • 1 cup granulated sugar (or ½ cup brown + ½ cup white for extra flavor)
  • 1 tsp vanilla extract

Optional Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ½ cup butter (softened)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another large bowl, beat the eggs, then add sugar, oil, and vanilla. Mix until well combined.
  4. Fold in the dry ingredients into the wet mixture until just combined. Then stir in the grated carrots and chopped walnuts.
  5. Pour the batter into your prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool completely before frosting, if using.
  7. To make the frosting, beat cream cheese and butter until smooth. Add vanilla and powdered sugar, and beat until fluffy. Spread over cooled cake.
