  • 1 cup crushed pineapple (drained)
  • ½ cup chopped walnuts (toasted for extra flavor, optional)
  • ½ cup raisins (golden or regular)
  • ½ cup mayonnaise or Greek yogurt (for a lighter version)
  • 1 tablespoon honey or maple syrup (optional, for extra sweetness)
  • Pinch of salt (to taste)

Instructions

  1. In a large mixing bowl, combine the shredded carrots, crushed pineapple, raisins, and chopped walnuts.
  2. In a small bowl, whisk together the mayonnaise (or yogurt), honey (if using), and a pinch of salt until smooth.
  3. Pour the dressing over the carrot mixture and stir until everything is evenly coated.
