- ½ cup mayonnaise or Greek yogurt (for a lighter version)
- 1 tablespoon honey or maple syrup (optional, for extra sweetness)
- Pinch of salt (to taste)
Instructions
- In a large mixing bowl, combine the shredded carrots, crushed pineapple, raisins, and chopped walnuts.
- In a small bowl, whisk together the mayonnaise (or yogurt), honey (if using), and a pinch of salt until smooth.
- Pour the dressing over the carrot mixture and stir until everything is evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
- Stir again before serving, and top with a few extra walnuts if desired.
