Ingredients:
For the Cake:
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 cup (240ml) vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups (330g) grated carrots
- 1 cup (100g) chopped walnuts or pecans (optional)
- 1/2 cup (85g) raisins (optional)
For the Cream Cheese Frosting:
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 4 cups (500g) powdered sugar, sifted
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper. - Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. - Mix Wet Ingredients:
In a separate bowl, combine the oil, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until just combined. - Add Carrots and Optional Mix-Ins:
