Carrot Cake Recipe

This moist and flavorful carrot cake is a showstopper! Packed with fresh carrots, warm spices, and a creamy cream cheese frosting, it’s perfect for any celebration or just because you deserve a treat.

Ingredients:

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup (240ml) vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups (330g) grated carrots
  • 1 cup (100g) chopped walnuts or pecans (optional)
  • 1/2 cup (85g) raisins (optional)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (500g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Mix Dry Ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Mix Wet Ingredients:
    In a separate bowl, combine the oil, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  4. Add Carrots and Optional Mix-Ins:
    Fold in the grated carrots, nuts, and raisins (if using).
  5. Bake the Cake:
    Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  6. Prepare the Frosting:
    In a large bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar, vanilla extract, and salt, beating until creamy and fluffy.
  7. Assemble the Cake:
    Place one cake layer on a serving plate. Spread a generous layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
  8. Decorate (Optional):
    Garnish with chopped nuts, shredded coconut, or a light dusting of cinnamon, if desired.
