This delightful caramel pudding is a creamy, smooth dessert with a rich caramel flavor that melts in your mouth. It’s perfect for any occasion, easy to prepare, and sure to impress your family and friends!
Ingredients:
For the Caramel:
- 1 cup granulated sugar
- 1/4 cup water
For the Pudding:
- 2 cups milk (whole or 2%)
- 1/2 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Make the Caramel:
- In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves.
- Once dissolved, stop stirring and allow the mixture to come to a boil. Cook until it turns a deep amber color, about 8-10 minutes. Be careful not to burn it.
- Quickly pour the caramel into a 9-inch round baking dish or individual ramekins, tilting to coat the bottom evenly. Set aside to cool.
- Prepare the Pudding:
- In a saucepan, heat the milk over medium heat until it is just about to boil. Remove from heat.
- In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.
- Gradually pour the hot milk into the egg mixture, whisking continuously to prevent the eggs from scrambling.
- Combine and Bake:
- Pour the pudding mixture over the cooled caramel in the baking dish.
- Place the baking dish in a larger baking pan and fill the outer pan with hot water until it reaches halfway up the sides of the pudding dish.
- Bake in a preheated oven at 350°F (175°C) for about 45-50 minutes or until the pudding is set and a knife inserted in the center comes out clean.
- Cool and Serve:
- Remove the pudding from the water bath and let it cool at room temperature. Then refrigerate for at least 2 hours or until chilled.
- To serve, run a knife around the edges of the pudding and invert it onto a plate. The caramel will flow over the top, creating a beautiful glaze.
Enjoy your delicious homemade caramel pudding!
