Ingredients:

For the Cake:

  • 2 ½ cups (315g) all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • 1 cup (240ml) vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup (240ml) buttermilk
  • 2 medium apples, peeled, cored, and finely chopped

For the Caramel Sauce:

  • 1 cup (200g) granulated sugar
  • 6 tbsp (85g) unsalted butter, cubed
  • ½ cup (120ml) heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Mix Wet Ingredients: In a large bowl, beat the sugars and oil until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine Dry and Wet: Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Fold in the chopped apples gently.
  5. Bake the Cake: Pour the batter into the prepared pan. Smooth the top with a spatula. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  6. Make the Caramel Sauce:
    • In a medium saucepan over medium heat, melt the sugar while stirring constantly until it turns a golden amber color.
    • Add the butter and whisk until fully combined. Slowly pour in the cream while whisking; the mixture will bubble vigorously.
    • Remove from heat and stir in vanilla and salt. Allow the sauce to cool slightly before using.
  7. Assemble: Drizzle the caramel sauce over the cooled cake. Serve with extra caramel sauce if desired.

Enjoy your delicious caramel apple cake!
