Ingredients
- 4 slices of crusty bread (like sourdough or ciabatta)
- 4 tablespoons basil pesto (store-bought or homemade)
- 2 medium tomatoes, sliced
- 8 oz (225g) fresh mozzarella, sliced
- Fresh basil leaves, for garnish
- 1 tablespoon balsamic glaze (optional)
- Olive oil, for brushing
- Salt & freshly ground black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C) or heat a grill pan over medium-high heat.
- Brush the bread slices lightly with olive oil on both sides. Toast in the oven or on the grill pan for 3–4 minutes per side, until golden and crisp.
- Spread pesto evenly over each toasted bread slice.
- Layer tomato and mozzarella slices on top of the pesto. Sprinkle with a little salt and pepper.
- Optional: Return to the oven for 3–5 minutes, just until the mozzarella begins to soften (not melt completely).
- Drizzle with balsamic glaze if using, and garnish with fresh basil leaves.
