Caprese Pesto Toast

Ingredients

  • 4 slices of crusty bread (like sourdough or ciabatta)
  • 4 tablespoons basil pesto (store-bought or homemade)
  • 2 medium tomatoes, sliced
  • 8 oz (225g) fresh mozzarella, sliced
  • Fresh basil leaves, for garnish
  • 1 tablespoon balsamic glaze (optional)
  • Olive oil, for brushing
  • Salt & freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) or heat a grill pan over medium-high heat.
  2. Brush the bread slices lightly with olive oil on both sides. Toast in the oven or on the grill pan for 3–4 minutes per side, until golden and crisp.
  3. Spread pesto evenly over each toasted bread slice.
  4. Layer tomato and mozzarella slices on top of the pesto. Sprinkle with a little salt and pepper.
  5. Optional: Return to the oven for 3–5 minutes, just until the mozzarella begins to soften (not melt completely).
  6. Drizzle with balsamic glaze if using, and garnish with fresh basil leaves.
