California Spaghetti Salad recipe

Ingredients

  • 12 oz spaghetti, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup shredded carrots
  • 1/2 cup grated Parmesan cheese

Dressing:

  • 1/2 cup Italian dressing
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook spaghetti according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled spaghetti with cherry tomatoes, cucumber, bell peppers, red onion, olives, carrots, and Parmesan cheese.
  3. In a small bowl, whisk together Italian dressing, olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper.
  4. Pour the dressing over the spaghetti mixture and toss until well coated.
  5. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  6. Serve chilled and enjoy!
