Ingredients
- 12 oz spaghetti, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup shredded carrots
- 1/2 cup grated Parmesan cheese
Dressing:
- 1/2 cup Italian dressing
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook spaghetti according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled spaghetti with cherry tomatoes, cucumber, bell peppers, red onion, olives, carrots, and Parmesan cheese.
- In a small bowl, whisk together Italian dressing, olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper.
- Pour the dressing over the spaghetti mixture and toss until well coated.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Serve chilled and enjoy!
