Ingredients

  • 2 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1 cup (240ml) milk
  • 1/3 cup (80ml) vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 1/2 tsp baking powder
  • Pinch of salt
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your pan or oven: If baking in the oven, preheat to 350°F (175°C). For stovetop, heat a non-stick pan with a lid over low heat.
  2. Whisk eggs and sugar: In a mixing bowl, beat eggs and sugar until light and fluffy.
  3. Add wet ingredients: Stir in milk, oil (or butter), and vanilla extract until well combined.
  4. Combine dry ingredients: Sift in flour, baking powder, and salt. Mix just until smooth—don’t overmix.
  5. Cook or bake:
    • Oven method: Pour into a greased and floured cake pan. Bake for 20–25 minutes or until a toothpick comes out clean.
    • Stovetop method: Pour batter into a greased pan, cover with a lid, and cook on low heat for about 12–15 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & serve: Let it cool slightly, then dust with powdered sugar if desired. Slice and enjoy the melt-in-your-mouth texture!
