Cajun Shrimp Scampi

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp Cajun seasoning (more to taste)
  • 1/4 tsp crushed red pepper flakes (optional, for heat)
  • 1/4 cup dry white wine or chicken broth
  • Juice of 1/2 lemon
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook Pasta:
    Cook the linguine according to package directions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  2. Season Shrimp:
    Pat shrimp dry and season with Cajun seasoning and a pinch of salt.
  3. Sauté Shrimp:
    In a large skillet, heat the olive oil and 1 tbsp butter over medium-high heat.
    Add shrimp and cook for about 2–3 minutes per side, until pink and opaque. Remove shrimp and set aside.
  4. Make Sauce:
    In the same skillet, reduce heat to medium. Add remaining butter and minced garlic. Sauté for about 30 seconds until fragrant.
    Pour in white wine or chicken broth and let it simmer for 2–3 minutes to reduce slightly.
  5. Combine:
    Stir in lemon juice, crushed red pepper (if using), and a splash of the reserved pasta water.
    Add the cooked pasta and shrimp back to the skillet. Toss everything together to coat.
  6. Garnish & Serve:
    Sprinkle with chopped parsley and Parmesan if desired. Serve hot with lemon wedges.
