Ingredients

  • 1 medium-sized green cabbage, finely shredded
  • 2 tablespoons vegetable oil or mustard oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 medium onion, thinly sliced
  • 2 green chilies, slit (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1/2 teaspoon garam masala (optional)
  • Fresh coriander leaves, chopped, for garnish
  • Juice of half a lemon

Instructions

  1. Heat the oil in a heavy-bottomed pan or kadhai over medium flame.
  2. Once the oil is hot, add mustard seeds and let them splutter for a few seconds.
  3. Add cumin seeds and allow them to sizzle until fragrant.
  4. Add the sliced onions and sauté until they become soft and light golden in color.
  5. Mix in the green chilies and ginger-garlic paste. Cook for a minute until the raw smell disappears.
  6. Sprinkle turmeric powder and red chili powder into the pan and stir quickly to blend the spices with the oil and onion mixture.
  7. Add the shredded cabbage and mix everything well so the spices coat the cabbage evenly.
  8. Cook uncovered on medium flame for 7–10 minutes, stirring occasionally to prevent burning. The cabbage should begin to soften while still retaining a slight crunch.
  9. Season with salt to taste and continue to cook for another 5 minutes until the cabbage is fully tender and well flavored.
  10. Add garam masala if desired, and mix thoroughly to enhance the aroma and depth of flavor.
  11. Turn off the heat and drizzle fresh lemon juice over the cooked cabbage to add a tangy kick and brightness.
  12. Garnish with freshly chopped coriander leaves before serving.
