Butternut Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup finely chopped butternut squash (roasted & pureed)
  • ½ teaspoon cinnamon (optional)
  • ½ cup chopped nuts (pecans or walnuts)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the butter and sugars in a large bowl until light and fluffy.
  3. Add the egg and vanilla extract, then mix until well combined.
  4. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the butternut squash puree and chopped nuts.
  7. Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until edges turn golden brown.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
