Ingredients
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup finely chopped butternut squash (roasted & pureed)
- ½ teaspoon cinnamon (optional)
- ½ cup chopped nuts (pecans or walnuts)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the butter and sugars in a large bowl until light and fluffy.
- Add the egg and vanilla extract, then mix until well combined.
- In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fold in the butternut squash puree and chopped nuts.
- Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges turn golden brown.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
