Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup fresh chives, chopped
- 3/4 cup buttermilk (plus a little extra for brushing)
- 1 tablespoon honey (optional, for a touch of sweetness)
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
- Cut in the butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Add the chives: Stir in the chopped fresh chives until evenly distributed.
- Add buttermilk: Pour the buttermilk into the mixture and stir gently with a wooden spoon or spatula until the dough just begins to come together. Be careful not to overmix.
- Form the biscuits: Turn the dough out onto a lightly floured surface. Gently press it into a rectangle about 1-inch thick. Fold the dough over onto itself a few times to create layers. Pat it out again to about 1-inch thickness. Use a biscuit cutter or a round glass to cut out biscuits.
- Bake: Place the biscuits onto the prepared baking sheet, ensuring they are close together for soft sides. Brush the tops with a little extra buttermilk for a golden finish. Bake for 12-15 minutes or until the tops are golden brown.
- Serve: Remove the biscuits from the oven and allow them to cool slightly before serving. Optionally, drizzle with a little honey for added sweetness.
