Butter Swim Biscuits Recipe

These buttery, flaky biscuits are incredibly easy to make. The “swim” in butter makes them extra rich and delicious.

Ingredients:

  • 2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1 stick (1/2 cup) unsalted butter, melted

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 450°F (232°C).
    • Pour the melted butter into a 9-inch square baking dish.
  2. Combine Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Add Buttermilk:
    • Pour the buttermilk into the dry ingredients and stir just until a soft dough forms. Do not overmix.
  4. Form and Cut Biscuits:
    • Lightly flour a surface.
    • Turn the dough out onto the floured surface and gently knead it a few times until it comes together.
    • Gently pat the dough into a roughly 1-inch thick rectangle.
    • Cut the dough into 9 squares, or use a biscuit cutter.
  5. Swim in Butter:
    • Place the biscuits in the baking dish, allowing them to swim in the melted butter.
  6. Bake:
    • Bake for 20-25 minutes, or until the biscuits are golden brown.
  7. Serve:
    • Remove from oven and let cool slightly. Serve warm.

Tips for Success:

  • Don’t overmix: Overmixing the dough will result in tough biscuits.  
  • Buttermilk: Buttermilk adds tang and tenderness. If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • Golden brown: Keep an eye on the biscuits while they bake, and adjust the baking time as needed to achieve a golden brown color.
