Butter Rum Pecan Cookies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract  
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans  
  • 1/4 cup dark rum

Instructions:

  1. Cream the Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.  
  4. Mix in Pecans and Rum: Stir in the chopped pecans and dark rum.
  5. Shape and Bake: Drop by rounded tablespoons onto ungreased baking sheets. Bake in a preheated 350°F (175°C) oven for 10-12 minutes, or until golden brown.
  6. Cool and Enjoy: Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
