- 2 cups fresh broccoli florets (finely chopped and lightly steamed)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko or regular)
- 2 large eggs
- 2 tablespoons all-purpose flour
- 2 cloves garlic (minced)
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil (for frying)
Instructions
- Prep the broccoli: Lightly steam the broccoli until tender but still bright green. Finely chop it and let it cool slightly.
- Mix the ingredients: In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, flour, garlic, onion powder, salt, and pepper. Stir until everything is well combined.
- Shape the patties: Scoop about 2 tablespoons of the mixture and form it into small patties using your hands. Flatten them slightly.
- Cook the patties: Heat a thin layer of olive oil in a non-stick skillet over medium heat. Fry the patties for about 3–4 minutes on each side, or until golden brown and crispy.
- Serve: Transfer to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce or a squeeze of lemon!
