These broccoli cheese patties are a delicious and easy way to get your veggies in! They’re perfect as a side dish, appetizer, or even a light meal.
Ingredients:
- 1 medium head of broccoli, chopped into small florets (about 3 cups)
- 1 cup shredded cheddar cheese (or a blend of your favorite cheeses)
- 1/2 cup breadcrumbs (plain or panko)
- 1/4 cup grated Parmesan cheese
- 1 small onion, finely chopped (about 1/4 cup)
- 2 cloves garlic, minced
- 1 large egg, lightly beaten
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: red pepper flakes for a little heat
Instructions:
- Cook the Broccoli:
- Steam or boil the broccoli florets until tender-crisp, about 5-7 minutes. Drain well and let cool slightly.
- Once cooled, finely chop the broccoli. You want small pieces so the patties hold together well.
- Combine Ingredients:
- In a large bowl, combine the chopped broccoli, shredded cheddar cheese, Parmesan cheese, breadcrumbs, chopped onion, minced garlic, egg, oregano, salt, and pepper (and red pepper flakes, if using).
- Mix well until all ingredients are evenly distributed.
- Form the Patties:
- Take about 1/4 cup of the broccoli mixture and form it into a patty.
- Repeat with the remaining mixture.
- Cook the Patties:
- Heat the olive oil in a large skillet over medium heat.
- Carefully place the patties in the skillet.
- Cook for about 4-5 minutes per side, or until golden brown and heated through.
- Serve:
- Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
- Serve warm.
Tips and Variations:
- Cheese Variations: Feel free to experiment with different cheeses, such as mozzarella, Monterey Jack, or pepper jack.
- Vegetable Variations: You can add other vegetables, such as finely chopped carrots or bell peppers.
- Binding Agent: if the mixture is to wet, add more breadcrumbs.
- Baking: For a healthier option, you can bake the patties. Preheat your oven to 400°F (200°C). Place the patties on a baking sheet lined with parchment paper and bake for about 20-25 minutes, flipping halfway through.
- Dipping Sauces: Serve with your favorite dipping sauces, such as ranch dressing, marinara sauce, or a creamy garlic dip.
- Gluten-Free: Substitute gluten-free breadcrumbs.
