- 2 cups broccoli florets, steamed and finely chopped
- 1 cup shredded cheddar cheese (or cheese of your choice)
- 1/2 cup breadcrumbs (or panko for extra crunch)
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons flour (optional, for binding)
- 2 tablespoons olive oil or butter (for frying)
Instructions
- Prepare the Broccoli: Steam the broccoli florets until tender (about 5-7 minutes). Once done, finely chop or mash the broccoli with a fork.
- Mix the Ingredients: In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, Parmesan cheese, breadcrumbs, garlic powder, onion powder, and eggs. Add salt and pepper to taste. Mix well until everything is well combined.
- Bind the Mixture: If the mixture feels too loose, you can add 2 tablespoons of flour to help bind it together.
- Form the Patties: Scoop out spoonfuls of the mixture and shape them into small patties, about 2-3 inches in diameter.
- Fry the Patties: Heat olive oil or butter in a frying pan over medium heat. Once hot, carefully place the patties in the pan. Fry for 3-4 minutes on each side until golden brown and crispy.
- Serve: Remove the patties from the pan and place them on a paper towel to drain excess oil. Serve warm as an appetizer, side dish, or snack!
