Ingredients

  • 2 cups broccoli florets, steamed and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (or panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Prepare the broccoli: Steam the broccoli florets until tender, about 4-5 minutes. Once steamed, chop them finely and set aside to cool.
  2. Mix the ingredients: In a large bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Stir everything together until well mixed.
  3. Form the patties: Use your hands to shape the mixture into small patties, about 2-3 inches wide. If the mixture feels too wet, add more breadcrumbs until it holds together well.
  4. Fry the patties: Heat a tablespoon of olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 3-4 minutes per side or until golden brown and crispy.
  5. Drain excess oil: Once cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil.
  6. Serve: Serve warm, garnished with extra Parmesan cheese or a dipping sauce of your choice.
