- 2 cups broccoli florets, steamed and chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (or panko for extra crispiness)
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Prepare the broccoli: Steam the broccoli florets until tender, about 4-5 minutes. Once steamed, chop them finely and set aside to cool.
- Mix the ingredients: In a large bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Stir everything together until well mixed.
- Form the patties: Use your hands to shape the mixture into small patties, about 2-3 inches wide. If the mixture feels too wet, add more breadcrumbs until it holds together well.
- Fry the patties: Heat a tablespoon of olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 3-4 minutes per side or until golden brown and crispy.
- Drain excess oil: Once cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil.
- Serve: Serve warm, garnished with extra Parmesan cheese or a dipping sauce of your choice.
