- 2 cups broccoli florets, steamed and finely chopped
- 1 cup shredded cheddar cheese
- ½ cup breadcrumbs (or panko for extra crispiness)
- ¼ cup grated Parmesan cheese
- 2 eggs, beaten
- 2 cloves garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional)
- 1 tablespoon olive oil (for frying)
Instructions
- In a large bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, garlic, onion powder, salt, black pepper, and paprika.
- Add the beaten eggs and mix until the ingredients are well combined.
- Take about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
- Heat olive oil in a skillet over medium heat.
- Place the patties in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and place on a paper towel to drain any excess oil.
- Serve warm with your favorite dipping sauce, such as ranch or sour cream.
