Broccoli Cheese Patties

Ingredients

  • 2 cups broccoli florets, steamed and finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs (or panko for extra crispiness)
  • ¼ cup grated Parmesan cheese
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 1 tablespoon olive oil (for frying)

Instructions

  1. In a large bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, garlic, onion powder, salt, black pepper, and paprika.
  2. Add the beaten eggs and mix until the ingredients are well combined.
  3. Take about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Place the patties in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel to drain any excess oil.
  7. Serve warm with your favorite dipping sauce, such as ranch or sour cream.
