Breakfast Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup milk (or buttermilk)
  • 1 tsp vanilla extract
  • 1 cup mix-ins (chocolate chips, blueberries, nuts, or diced ham & cheese)

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Prepare wet ingredients: In another bowl, whisk melted butter, eggs, milk, and vanilla extract until well combined.
  4. Combine: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Add mix-ins: Fold in your choice of mix-ins.
  6. Fill muffin tin: Spoon batter into muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool muffins for a few minutes in the tin before transferring to a wire rack.
