- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup milk (or buttermilk)
- 1 tsp vanilla extract
- 1 cup mix-ins (chocolate chips, blueberries, nuts, or diced ham & cheese)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Prepare wet ingredients: In another bowl, whisk melted butter, eggs, milk, and vanilla extract until well combined.
- Combine: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
- Add mix-ins: Fold in your choice of mix-ins.
- Fill muffin tin: Spoon batter into muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool muffins for a few minutes in the tin before transferring to a wire rack.
