Boiled Egg & Veggie Fruit Salad

Ingredients

  • 3 boiled eggs (sliced or chopped)
  • 1 cup cucumber (diced)
  • 1 cup tomato (chopped)
  • ½ cup carrot (grated or diced)
  • ½ cup apple (chopped)
  • ½ cup grapes (halved)
  • ½ cup lettuce or mixed greens (torn)
  • 2 tbsp lemon juice or light dressing
  • Salt & black pepper to taste

Instructions

  1. Boil the eggs, peel, and slice or chop them.
  2. In a large bowl, combine cucumber, tomato, carrot, apple, grapes, and lettuce.
  3. Add the boiled eggs on top.
  4. Drizzle with lemon juice or your preferred light dressing.
  5. Season with salt and black pepper.
  6. Toss gently and serve fresh.
