Ingredients
- 2 cups vanilla ice cream (softened slightly)
- 1 cup fresh or frozen blueberries
- 2 tbsp sugar (adjust to taste)
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- Whipped cream (optional, for topping)
- Granola or crushed cookies (optional, for layering)
- Fresh mint leaves (optional, for garnish)
Instructions
- Make the Blueberry Sauce:
- In a small saucepan, combine blueberries, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the berries burst and the mixture thickens slightly (about 5–7 minutes).
- Remove from heat, stir in vanilla extract, and let it cool completely.
- Layer the Parfait:
- In a parfait glass or small jar, spoon a layer of vanilla ice cream.
- Add a layer of blueberry sauce over the ice cream.
- Optionally, add a layer of granola or crushed cookies for texture.
- Repeat the layers until the glass is full, finishing with a swirl of blueberry sauce on top.
- Top & Serve:
- Add a dollop of whipped cream on top if desired.
- Garnish with fresh mint leaves or a few whole blueberries.
- Serve immediately and enjoy!
