Ingredients

  • 2 cups vanilla ice cream (softened slightly)
  • 1 cup fresh or frozen blueberries
  • 2 tbsp sugar (adjust to taste)
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • Whipped cream (optional, for topping)
  • Granola or crushed cookies (optional, for layering)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Make the Blueberry Sauce:
    • In a small saucepan, combine blueberries, sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the berries burst and the mixture thickens slightly (about 5–7 minutes).
    • Remove from heat, stir in vanilla extract, and let it cool completely.
  2. Layer the Parfait:
    • In a parfait glass or small jar, spoon a layer of vanilla ice cream.
    • Add a layer of blueberry sauce over the ice cream.
    • Optionally, add a layer of granola or crushed cookies for texture.
    • Repeat the layers until the glass is full, finishing with a swirl of blueberry sauce on top.
  3. Top & Serve:
    • Add a dollop of whipped cream on top if desired.
    • Garnish with fresh mint leaves or a few whole blueberries.
    • Serve immediately and enjoy!
