Blueberry Crumb Bar Recipe

Ingredients:

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cut into cubes
  • 1 egg

  • Zest of 1 lemon
  • 4 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar (for filling)
  • 4 teaspoons cornstarch

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a medium mixing bowl, combine 1 cup sugar, baking powder, flour, and salt. Add lemon zest and mix well.
  3. Add the cubed butter and egg to the dry ingredients. Use a pastry cutter or fork to blend the mixture until crumbly.
  4. Press half of the crumb mixture into the prepared baking dish to form the base layer.
