Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon (optional for cozy flavor)
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream or plain yogurt
- 1 medium apple, peeled and diced
- 1 cup fresh or frozen blueberries (if frozen, don’t thaw)
- 1 tbsp flour (for coating fruit)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a bowl. Set aside.
- In another bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Mix in the sour cream until smooth.
- Toss diced apples and blueberries with 1 tbsp flour to prevent sinking.
- Fold dry ingredients into the wet mixture gently, then fold in the coated fruit.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Optional: Dust with powdered sugar or drizzle a simple glaze once cooled!
