Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional for cozy flavor)
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt
  • 1 medium apple, peeled and diced
  • 1 cup fresh or frozen blueberries (if frozen, don’t thaw)
  • 1 tbsp flour (for coating fruit)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a bowl. Set aside.
  3. In another bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  4. Mix in the sour cream until smooth.
  5. Toss diced apples and blueberries with 1 tbsp flour to prevent sinking.
  6. Fold dry ingredients into the wet mixture gently, then fold in the coated fruit.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
