Blender Sponge Cake (Bizcocho en Licuadora)

Ingredients

  • 4 large eggs
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) milk
  • 1/2 cup (120 ml) vegetable oil
  • 1 tsp vanilla extract
  • 1 ½ cups (180 g) all-purpose flour
  • 1 tbsp baking powder
  • Pinch of salt
  • Optional: zest of 1 lemon or orange for extra flavor

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a blender, combine eggs, sugar, milk, oil, and vanilla. Blend for about 30 seconds until smooth and foamy.
  3. Add flour, baking powder, and salt (and zest if using). Pulse until just combined. Do not overmix.
  4. Pour batter into the prepared pan. Tap gently to remove air bubbles.
  5. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Dust with powdered sugar or frost as desired.
